Sumaq’s (Quechua for “good,” “rich,” “delicious”) founder and chef Irene Gutierrez opens the flavors of her homeland, Peru, to her guests. The concept is to show the guests of the restaurant in Palma the diversity of flavors and products of her country, located on the Pacific coast, through the Amazon and in the Andes.
