Matanza and its meaning

Matanza (matances in Catalan) – a long-standing and important tradition of Mallorcan locals, connected to the ritual of the slaughter of a pig for meat and sausage. This rite takes root in the rural life of the island and is held from November to February. It is not only a part of culinary culture, but also a reason for familial and friendly gatherings, as it brings together all members of joint work. The atmosphere of happiness and celebration is always in the air at Matanza.

Matanza begins with the slaughter of the pig, and then the participants cut up the carcasses and prepare various meat products. The main ones are the sobrasada sausages (pork sausage with paprika and spices), botafarro (pork blood sausage) and longaniza (thin pork sausage). All these products can be stored for up to a year.

During the matanza, other dishes are also prepared, such as the arroz brut (liquid rice with meat and vegetables), which is served to all those involved in the process so that they can gain strength.

For the Mallorcans Matanza is not just a tradition, but an important ritual related to their history and identity. It has not lost its popularity today. In some villages, this is an important public event where residents and tourists can learn more about the traditions of Mallorca.

Today, despite the changes in people’s lifestyles, this custom remains an important part of rural culture, although modern elements are added to the process, such as the use of refrigeration equipment and other techniques
