Llampuga: seasonal fish of Mallorca
Llampuga is a seasonal fish that is found in the mediterranean sea around the coast of Mallorca. It is especially popular in autumn. Its scientific name is Coryphaena hippurus. In international cuisines this fish is known as dorado (not to be confused with dorada) or coryphaena, as well as Mahi-Mahi and Golden Mackerel. This fish is known for its elongated body with scales of metallic blue, green and golden hues, although after catching this coloring quickly disappears. Llampuga is a predatory and very fast species and it is most often found in warm open sea waters.
In Mallorca llampuga is considered a traditional and precious seasonal product. The fishing season for it is strictly regulated and lasts from end of august until december, which is associated with both natural fish migration cycles and historical fishing traditions. It’s caught by a special method using «llampuguera» nets (wooden floating shields under which fish hide from the sun), which are allowed only during that period. In 2025, the fishing season began on August 25 and will last until December 31.
In cooking llampuga is valued for its tender, moderately fatty meat. It is grilled, sautéed with onion and tomatoes, fried or baked with vegetables. One of Mallorca’s classic dishes is llampuga with raisins and pine nuts, lemon and onion. This dish is especially popular in September and October during the holidays. It’s also often baked in salt. It’s a traditional and one of the most popular recipes. That’s how the fish is baked evenly, thus remaining juicy and preserving all the aromas of the sea. The cost of llampuga in the markets and fish shops of the city varies from 12 to 18 euros per kilogram.
